Quick and Delish Lunch

It is a constant fight with kids (and myself) to eat something that looks and tastes great for lunch that isn't a cheeseburger. It also has to e quick so I can eat in between showings, spending time with family and writing out blogs and newsletters. Enter sweet potato toast. This is been a lunch time game changer for our family. We can indulge in small bites of our favorite things while pairing them with super nutritious small bits of deliciousness! Here is the fast and furious recipe, be prepared to drool:


Sweet Potato Toast

Preheat oven to 400 degrees. Slice sweet potatoes lengthwise with a mandolin (or be very careful with a knife). Slice these on demand, as they do not "toast" very well the following day. Brush with coconut or olive oil and sprinkle with salt and roast until crisp but tender, about 20 minutes.

Top with your favorite foods! The possibilities are endless, but here are some of our favorites:

  • Almond butter, raspberries, apples and blueberries with a dash of cinnamon on top.
  • Avocado, Trader Joe's Canned Smoked Trout, sliced red onions and capers.
  • Arugula, prosciutto, ciliegine (baby fresh mozzarella) and toasted sunflower seeds (shown above)
  • Avocado, tomato, basil and fresh mozzerella
